Joined by a passionate group of restaurant industry vets, Executive Chef Nicole Brisson is proving that good ingredients, good people and good practices aren’t a desert mirage. Convinced that sustainable dining is the only food of the future, Brezza is committed to bringing slow and seasonal culinary expertise to a scene stuck in the too-far, too-fast corporate landscape.

Since moving to Las Vegas 15 years ago, Nicole made her mark in the male-dominated culinary industry. She opened Wynn Las Vegas, served as chef di cucina at OTTO Encotoca, was the executive chef as Camevino, acted as the culinary director of Batali & Bastianich Hospitality Group's Las Vegas operations and became the first female executive chef of an Eataly in the U.S.
Most recently, Nicole opened "Best New Restaurant", Locale, in SW Vegas, earned a spot in VEGAS INC's 40 under 40 and was semifinalist for the 2020 James Beard Best Chef: Southwest Award.
